Easy Crispy Roasted Sweet Potatoes
I finally figured out the secret to easy crispy roasted sweet potatoes that are soft on the inside and crispy on the outside!
Ingredients
- 2 large sweet potatoes
- 2 tbsp fat of choice such as coconut oil or ghee
- 3/4 tsp sea salt
Instructions
- Peel the sweet potatoes and dice them into 1″ cubes and put into a large bowl.
- Preheat the oven to 425 degrees.
- Melt the coconut oil or ghee.
- Pour the melted coconut oil or ghee on the sweet potatoes and toss to coat.
- Sprinkle potatoes with sea salt and toss to coat.
- Roast in the oven for 45 minutes, stiring every 15 minutes.
- Pop the sweet potatoes into the air fryer for 10 minutes at 350 degrees. Shake them at the 5 minute mark.
- Enjoy!
Dani’s Drive Tip: If you’re meal prepping, wait and do the air fryer bit until you’re ready to eat the sweet potatoes for the freshest crisp!
