Easy Crispy Roasted Sweet Potatoes

I finally figured out the secret to easy crispy roasted sweet potatoes that are soft on the inside and crispy on the outside!


  • 2 large sweet potatoes
  • 2 tbsp fat of choice such as coconut oil or ghee
  • 3/4 tsp sea salt


  1. Peel the sweet potatoes and dice them into 1″ cubes and put into a large bowl.
  2. Preheat the oven to 425 degrees.
  3. Melt the coconut oil or ghee.
  4. Pour the melted coconut oil or ghee on the sweet potatoes and toss to coat.
  5. Sprinkle potatoes with sea salt and toss to coat.
  6. Roast in the oven for 45 minutes, stiring every 15 minutes.
  7. Pop the sweet potatoes into the air fryer for 10 minutes at 350 degrees. Shake them at the 5 minute mark.
  8. Enjoy!

Dani’s Drive Tip: If you’re meal prepping, wait and do the air fryer bit until you’re ready to eat the sweet potatoes for the freshest crisp!
